pistachio is its high fat. The question is that why Iran’s pistachio contains more fat?
The reason is the altitude of pistachio areas in Iran. The largest pistachio producer in the United States is at low altitude, with most pistachio areas in the United States less than 150 meters above sea level; however, the altitude of pistachio areas in Iran is 800 to 2000 meters above the sea level. This altitude leads to different temperatures of day and night, lower air pressure and relative moisture, higher density and better movement of vegetable sap, all of which lead to a better taste of Iranian pistachio.
The difference between Iranian and American pistachios
– Iranian pistachio tolerates up to 170 centigrade degrees due to its high oil content. This is while American pistachio with lower content of fat can tolerate 130 centigrade degrees.
– Another advantage of Iranian pistachio is higher content of kernel, so that the average percent of pistachio kernel is 56% in Iran, while it has been reported to be only 52% in the US.
– Better and more beautiful appearance compared to the American pistachio.

The unique taste of Iranian pistachio is due to different altitude of the pistachio gardens from the sea level.
The high altitude of pistachio areas in Iran has caused factors such as low air pressure and lower relative humidity and temperature difference during the day and night which causes vegetable sap to move in the branches and clusters of pistachio trees.
